Experimenting with avocado “cheese” for pizza

Tweaking this a little bit, currently tossing a grated, under-ripe avo, nutritional yeast flakes, a drizzle of olive oil and salt. Then using to top a pizza like grated cheese

Taste-wise this is the best attempt yet! Avo was probably slightly too hard - if a bit softer it can get slightly more “melty”. Trick is though, it can’t be too soft to grate.

Anyone tried something like this? I’m thoroughly enjoying it
