EDIT - Fixed!
Looks like removing the old Sol and replacing it did something with the date setting. To fix, go to "drive" in content manager, click the triple dots next to the "time" setting, and set a specific date. Looks like it defaulted to current date (winter) and grayed everything out. Weird way of handling "snow" as it doesn't look right at all, and green tarps were also affected and grayed out.
But set a specific date in spring/summer/fall, and then you can uncheck the specific date option again if you want and everything's back to normal.
Installed Sol 2.01 today following the instructions that come along with it and deleted my previous Sol install.
Now in the benchmark all trees and grass are gray.
After testing a few tracks, it looks like it varies on what happens. Nordschliefe looks fine, but on Monza the trees are all a muddy brown, for example.
Anyone know what's up with this and how to fix?
