In the season 7 leaked outline, Ellaria and Olenna made a deal with Daenerys - Ellaria and the sneks would be Wardenesses of the South with their post on Sunspear and Olenna would be providing a Tyrell cousin as king consort.
After Euron kills two sneks and feeds Cersei with Ellaria and Tyene, Varys mentions a civil war on Dorne, and that's why they didn't show at all or are mentioned till 8x04 - Toby Osmund is the representative who won the war at far south while they fought the Night King on Winterfell.
Given that the series doesn't contradict that part of the outlines, it can be presumed it all happened as writen there.
