Thermodynamics (I think): Why do my breakfast sausages roll around like crazy in a hot pan?

I know the skin of the sausage is probably tightening, and the skin probably conducts heat differently than the pork inside. I also think that this only happens once one side is cooked and I am trying to turn the sausages over. That probably has something to do with the phenomenon.
