How do magnetic fields get twisted?

When discussing solar physics, or other astronomical magnetic fields, you often hear mentions of twisted or knotted magnetic fields. However, from my understanding of magnetics, this can't be caused merely by the interactions of separate magnetic fields; you need something there to create the knotted field.

It probably involves charged particles somehow, but I don't know the process by which they end up creating such strong, twisted, long-lived magnetic fields.
