How are fossils used to predict anatomy even though other parts of the organism have decomposed?

I was watching a video about Hallucigenia (lindsay_nikole on Instagram) and she mentioned that for a long time it was hypothesized that the animal walked on the spikes and had mouths at the end of tentacles on its back. Apparently it was the complete opposite, walking on the tentacles with mouths at the end. It also took 100 years to properly locate where the head was.

I havenโ€™t verified the validity of this video, but regardless how is it possible to come to conclusions as this with only a fossil?
