Help identifying this concept

What would you call the idea that at some point, you have to define what is proof? In other words, at what point should one stop asking for proof, if such a point exists? When I say proof, I mean proving anything, at what point can you differentiate between "knowing" something and "believing" something. Also, any suggestions for reading on the "seeing is believing" concept? From a quick Google search, it seems that this topic is called "pseudoism", but that's not exactly what I was looking for. Thank you!
