Recommendations: 'Why believe what is true?'

I'm looking for essay or chapter length recommendations which respond in one way or another to questions about epistemic norms, specifically about ways to respond to questions like "why should I believe what is true?" (including responses which say the question makes no sense). I'm particularly interested in non-pragmatic/prudential responses.

(I'm working my way through the sizeable bibliography of the SEP article on the Ethics of Belief, but it's huge.)
