Dealership is trying to charge an $800 "dealer prep fee" and won't negotiate because the car has a lot of interested parties. What should I do?

Seems like they have me over a barrel here, as the car I want is very unique and apparently has a lot of potential buyers waiting in the wings... But the car is only $30k, so a fee of $800 just for "prep" on on top of a $325 document fee and a $400 etch fee...
Any suggestions on how to handle it? Obviously I could just walk away but that's not really an option.
