Unexpectedly edible plants found in Asheville?

If you've heard of onion grass, you've also probably tried munching on it once or twice. But how many of us have actually gone through the process of foraging for kudzu flowers for tea? Bamboo shoots are edible but take a long time to boil.

Any recommendations on unexpected local plants that are edible, regardless of native or invasive (invasive is actually a plus here)? How do you cook them? Do they taste good?

Edit: I also made some drink from violet leaves once. Again, too much work for me, but was pretty.
