The wonderful and confusing world of 12v lipo batteries.

I have made a project using 11.1v 1000mah lipo batteries, normally used for Airsoft. So far so good, I draw quite a bit of power, so I have a bunch of batteries. If I completely drain a battery, I will not I be able to recharge it. How do I stop that from happening? In RC cars, there is a thing called lipo cut of, that reduces the output of a neerly drained battery, so I dose not burn out.
