Can I recover data from my iPhone 7 that has not been backed up (recently) after a factory reset?

I had to download a new iOS on my iPhone 7 that was running iOS 13 (I did not want to upgrade because I wanted my battery life to still be half decent) to download Ticketmaster to show tickets for a concert I was going to today. During the update, my phone must have glitched out because it did not successfully complete the update. I plugged it into my PC that I have all of my phone data backed up to, but the last time I backed it up was around August of last year (I only have 5 gbs of iCloud data, and for some reason it only backed up messages, so I have to do all my backups manually). Basically, I am asking if it is possible to recover data from the last 8 months.

I know it is probably basically impossible, and I did everything wrong that I could have possibly done (I didn't even need the Tickemaster app), but I figured I'd try. I am mainly concerned with my notes and photos. Reminders and alarms I tangentially care about but that is definitely not my main concern. I was desperate enough to try out some of those very scammy seeming apps to recover data, but none of them pulled data that wasn't already re-synced on to my phone from the shreds of what actually fit in my iCloud storage. Is there anything else I could try?
