Finally getting a new phone and I don't know out how to selectively transfer data instead of transferring everything at once

I've had my phone for quite a while, and it's finally working so poorly that I didn't really have a choice but to upgrade. My savviness with iPhones is seriously lacking in comparison to my other tech knowledge, and I could use some help figuring out some set-up stuff.

I have a ton of photos on my phone (a little over 46,000), all of which are backed up to iCloud, which is connected and accessible via my macbook as well. Having that many photos, many of which aren't things I need on a regular basis, drives me insane, and I'd kind of like a fresh start with my new phone where I don't have to have all those photos showing up when I'm looking through things. I'd like to get better about deleting unneeded screenshots/bad photos/that sort of thing, but there's not much motivation to do so right now considering the state of things. I have an album of around a thousand photos I'd like to have on my new phone, but I'm unsure of how I can transfer those without showing every single photo that has ever been on my iCloud. Am I able to stop my old iCloud photos from showing up on my phone while still keeping them in the cloud, and transfer the photos I do want over?

Additionally, I don't really want to transfer all my apps over and stuff because I have a ton of apps downloaded that I just never use, and it makes things cluttered. I'd rather go into my new phone and redownload the few apps I actually use. If I don't choose to transfer all my data during set-up, will things like my contacts and saved passwords transfer? I transferred all my data to my current phone from the previous phone I had so there's like, at least eight years worth of stuff on there that I don't want to all go onto my new phone, but I wan't to keep the important things.

Sorry if it's confusing phrasing, it's hard to formulate exactly what I'm thinking but hopefully my questions are semi-understandable.
