Why is watching videos in the app such a shitshow? I might as well long-press every single video to open in safari (NOT in-app safari, mind you setting to play videos in safari automatically only opens in-app, which doesn’t work most of the time and I still have to resort to pressing the Safari button). Videos in the app either take forever to load, don’t start, don’t do anything. Why is this so broken?

Which subreddit are you viewing that's this problematic? I'm curious if there's a common video source that's problematic here, YouTube in particular (r/videos) can be weird, but primarily Reddit videos (r/whatcouldgowrong) can have some issues for some folks.
If you restart the app, does it temporarily get better?

Any chance you could attach a screen recording showing you opening the app from a force quit and navigating to a video and having it not play? Not doubting you at all, but I might be able to glean some helpful information in the video. https://support.apple.com/en-us/HT207935
