Rooting an old jellybean tablet

Greetings hive mind, I have an old Asus MeMO Pad HD 7 (ME173X) (ME173X) running Android 4.2.2 and the system update doesn't work.
If it matters, I would like to see if I can turn this into a dedicated AndroidAuto head mount using 'headunit reloaded'.
In any case I would love to remove the mountain of stock bloatware and see if I can update it any further. Could I accomplish any of this with rooting? How night I proceed? Thank you
