Eero and Echo dot on cellular WiFi

Our only access to internet (rural area) is a cellular signal via AT&T and a ZTE Home Base modem. It works well enough for our simple needs. Two retired people. One laptop. Two cell phones and a Smart TV which streams well with very limited buffering. No gaming or other high use activities. According to the Speedtest app, our download speeds run 20 to upper 40 Gbps. We recently were gifted an Echo Dot. It connects to the Home Base just fine and is located on the far side of this large house with two walls between the devices. There are currently four Alexa ā€œsmart plugsā€ controlling lamps. Everything works great.

I would like to add more smart plugs, switches, lights, and security cams. Iā€™d like to keep things simple and want everything to work with Alexa.

So, my questionsā€¦ 1. Would adding a couple more Echo Dots work to create a mesh to operate several smart devices mentioned above?

  1. Would a Eero gateway and two satellites (6 ) be better? The ZTE Homebase has an Ethernet connection for the gateway.

Again, we just want to add some convenience items (plugs, switches, etc) and three or four security cams (probably wireless).
Itā€™s a big house- about 4000 sq feet. Two story. So, extending WiFi for a stronger signal throughout the house would be great. My main concern is efficacy using only the fairly weak cellular WiFi.

What are your suggestions?
