We're definitely intending on doing all that. What insulation did you choose to replace the bats with? I've been doing some research but haven't made up my mind yet.

Well, I'm glad to know it's possible. All the videos I've seen of people removing the subfloor involve them cutting around the bolts, banging off the wood around the bolts, and then removing said bolts. The whole thing seemed really labor intensive and silly to me because then you can't reuse a perfectly good subfloor piece, but they probably didn't have the right tools for the job.
Admittedly, I'm worried about finding something seriously wrong with the trailer when we start tearing it apart. I've been looking at a lot of people's renovations online lately and found one couple who bought a 70's trailer which looked really nice on the inside (new paint, upholstery, etc.), but when they starting removing stuff they found a seriously damaged subfloor. To make it even worse, while trying to cut out the damaged part, they cut into one of the tanks and stepped through both the subfloor and underbelly. One part old trailer problems and two parts user error. It was painful to watch.
I'm also leaning toward foam boards, but mostly because frequent movement can break down the structure of spray foam, potentially causing health problems. It hasn't been proven yet, but I'm not going to take my chances. I also thought about using an extra layer to break contact between the ribs and the inner skin.
In regards to the subfloor, I have yet to see anyone take out the original subfloor in good condition and return it because of the bolts. I kinda want to take up the subfloor so I can better insulate the tanks in case we end up in cold weather, but it's not in bad condition. How did your subfloor removal work?

Working on those. I've yet to find a good time of day for lighting. Either it's glaring through the windows (some don't have shades and I live in the desert) or nonexistent.
