How do I determine the tempo of a song so that I can line up my samples accordingly when the tempo of the song is (purposefully) inconsistent?

I noticed that with rock songs, you always seem to have parts that are slightly out of phase or where the tempo changes a tiny little bit here and there. I can easily follow these changes by adjusting the bpm on a metronome while the song plays, or using the nudge buttons, but how could I track these tempo changes in order to copy/master-to-slave/automate them so that they will also apply for any overdub and/or sample that I later add to that song? So I want to determine the songโ€™s tempo at any given time, somehow let Ableton know about these tempo changes and where they occur (create a tempo track or something?) and make them apply to other tracks or samples. Any ideas?
