Mine:

1. Oliver Stone -- his commentary is always interesting; even if I dislike the film his discussion is always worth a re-watch with the commentary track on. He always does solo commentary and there is never a lull. He talks (real) shit about the actors and other people he worked with -- a true rarity in Hollywood.

2. David Fincher -- always goes into detail about why he did the things he did. He always mentions specifics about the cats in the movies (see: Gone Girl and The Girl with the Dragon Tattoo). Goes into specifics about the actors and how he dealt with them (Affleck refused to wear a Yankees cap on Gone Girl and he mentioned that it was stupid and unprofessional, talked about meeting Rooney Mara's sister Kate Mara on the set of GWTDT and casting her in House of Cards as Zoe Barnes)
