Physical Memory Spiking

Our company website seems to have physical memory spiking and maxing out at times, along with CPU usage and processes. It seems to happen sporadically. Like yesterday I was creating a new page and went to save a draft of it, nothing major and it killed the site for 5-10 minutes.

I understand that its most likely plugins effecting this, however my knowledge of diagnosing these issues is something I am really not familiar with. The problem is I can't reliably re-create the issue, it only happens at times so disabling plugins one by one doesn't really work for me.

How else can I test or see what is causing these spikes as it seems to be appearing a bit more recently. Also the website seems to take a bit longer to load recently so Im sure there is more going on behind the scenes.
