Using VM's & Windows Server 2016 For Media Conversions

Hello! I work with a production company and we just received our first server unit. It is currently running Windows Server 2016. We plan on using this to be able to convert large (1k-2k files) batches of media files to HVEC (H.264/5). Does anyone have any suggestions as to the best way to facilitate this?

We currently use Adobe Media Converter & were planning on running two VM's using Hyper-V so we can run 2 batches at a time. Is this the best way to go? Suggestions for alternative software? We mostly need the ability to run batches of files at a time & have them maintain folder structure/file name.

I appreciate all input and suggestions as I have limited IT knowledge. I'm pretty tech savvy but by no means qualified. Thanks guys! :)
