Lots of missing files and folders after the Fall creators update

First i noticed that the update took almost half a day to finished , they i noticed that most of my file association was reset to default and programs / apps seems like it's their first timt to run , found out that the fall creators update installed a new windows and just migrated my old stuff... since there a windows.old folder that was created after the update

and what's worst is that i'm missing tons of data... huge database backups and other stuff.... i tried file recovery program from easus at acronis.. but none can locate them.. should i risk a system restore before the update?
