How do I know what tires will fit my wheels?

Hey guys I'm looking for my first set of wheels and tires and I'm just lost on how I would know if the tires I want will fit the wheels I want. I'm looking at a wheel size of 17x8.0 (to 8.5) 5x114.3 30 to 35.
Also, is anything going to change much if my center bore is more than what my car's is? My car has a center bore of 67mm but the wheels I'm looking at is 73mm
If someone can help me figure this out that will be greately appreciated
