Before you read any further just now that you will need some type of ice cream maker. I use a super old one that doesn't require salt or anything. You just put in the freezer over night and stir the cream around.
BASIL ICE CREAM
INGREDIENTS
- 2 cups fresh basil leaves. Chopped.
- 2 cups heavy cream.
- 1 cup whole milk.
- 3/4 cup white sugar
- 6 egg yolks.
- Zest of a lemon.
- 1/4 TSPN salt.
Put everything in a heavy bottom sauce pan. Bring just to a boil (make sure you stir it constantly so the cream doesn't burn) and remove from heat. Let sit for 30 min to a hour. Strain through a fine mesh strainer in to a bowl. Put in fridge to cool. Once cool make it however your ice cream maker wants you to make it.
That's it. Really simple and easy. You can make it any flavor you really want I just like different stuff then vanilla or chocolate. If you want cherry or strawberry then add those things after it cools. The basil and lemon zest make for a pretty great treat during these stupid hot days. Any questions feel free to ask.
