Friday Recipe: Chicken Paprikash

Everyone digs on Hungarian comfort food right? If you don't already, then try this one. It's quite possible if you're in the US, that the only exposure you've had to paprikash was that one scene from When Harry Met Sally, you know the one, and I don't mean the fake orgasm scene.

  • 2 boneless chicken thigh per person
  • 2 medium onions chopped
  • 2 cups chicken stock
  • 2 cloves garlic minced
  • 1/2 cup heavy whipping cream
  • 1 15 oz can of tomato sauce
  • 1 package egg noodles cooked to package directions
  • All of the paprika

You'll be using a 4 qt stock pot and a heavy duty frying pan. Cook the chicken in hot oil in the pan for about 5 minutes each side until well browned. It doesn't need to be fully cooked through. Chop into bite sized pieces and put in a bowl. In you stock pot, start cooking the onions until translucent and starting to brown, about 8 minutes then put in garlic for 30 seconds. Add your chicken, broth and tomato sauce and bring to a simmer. Add in A LOT of paprika, like really, you can't add too much IMO, if you're looking for amounts, a palmful or 3 tbsns is probably good, then simmer for 30 minutes. Finish with heavy cream and salt to taste, then serve over butter noodles. Spaetzle is what it's traditionally served with, I've tried it a couple of times and prefer the noodles. You can serve with a dollop of sour cream too.
