Since I was summoned last week about the lack of Friday Recipe threads, I figured I'd take time to do one.
On my hometown sub of /r/rva French Onion has been a popular topic of late, so I threw in my French Onion Recipe a couple of weeks ago. So here it is for /r/Wetshaving:
- 2 quarts (preferably homemade) chicken or beef stock
- 4 large vidalia onions chopped
- 1/2 cup dry vermouth
- 1/2 cup brandy
- couple of pinches of sugar
- couple of splashes each soy and fish sauce for umami
- half a loaf of your favorite bread
- grated Gruyere, amount to your liking
In a 4 qt or larger heavy stockpot, cook your onions over medium high heat with a neutral oil, stirring fairly continuously after the first few minutes. Depending on how high the heat, this can take up to 30 minutes. You want to keep cooking and stirring until the onion is very browned, but not burned. For the last couple of minutes when you think it's almost done, add your sugar. Then deglaze everything with the vermouth. Add stock and brandy, then your soy and fish sauces. Now salt to taste.
Cut your bread into 1 inch cubes. Spritz with olive oil or Pam, then some salt and pepper and toast for about 6 minutes. Add a handful of them into your bowl and sprinkle Gruyere on top. This is not the traditional method, but I find easier at home, and also you're not relegated to trying to cut a thick piece of cheese covered bread with a spoon.
Now you may be asking yourself, WTF is a recipe doing on a shaving hobbyist sub? I've been a part of this sub since our wicked edge days, then migrated to wet_shavers, and then finally came here when that place melted down. I've done this on and off for a long time, and the mods tend to lend me some disposition. So read the recipe and make it for your SO, they'll love it. Or downvote and move on. If you're interested in more, search the sub for "Friday Recipe", and you should come up with a lot I've posted over the years. Maybe I'll even remember to come back next week and do another one.
