How to loose weight healthily when you are at only 4-7kg of your target weight ?

Hello :)

I(31F) am 161cm (5'2''') and currently 60kg (132lbs). I have always fluctuated between 65 to 54kg. My goal is to achieve 54 or even push to 51 but in the healthiest way so I keep the benefit. So as I understand everything goes down to calorie counting and exercise, I am trying to do that. It has been a month I am more and more active (yoga everyday and I had to stup running beause of the runner knee, but I am trying rope jumping, boxing). However for the diet I struggle to find food that would be sustainable for the long term. I eat already well I think, I never snack, I am vegan for 11 years, I don't over use substitutes, I drink alcohol maybe 3/4 times a month and it is a bit of wine... but for some reasons I get stuck at 60ish since 4months. As I am vegan I struggle to find a diet plan on internet that I could follow and at the same time, I am afraid to be too restrictive so it wouldnt be sustainable.
