I don't know how to transcribe a melody idea into a score or piano roll

So every once in a while, I get musical ideas in my head, and I'd love to hear them for real. I have no background in music theory, but can come up with melodies on the fly almost.

My problem is taking a melody that I'm hearing in my head, and transcribing them to notes either a score or piano roll in a DAW. I have no idea what the notes are and for the life of me can't figure it out. When I try to lay something down, it sounds nothing like my melody idea.

How can I learn and practice this? Any beginner tips?
