New to warhammer and have a questions about conversions

How does it work? You just take pieces from a set you like and add it to a set you like? How do these play on the table top? Where do you get you data sheets for these guys? Hope this is okay asking here. If there's a beginner subreddit for this it would be great to be directed there.
