Thoughts on Proxy armies and official play?

Hey folks,
I’m very new to the community, and haven’t played my first game (yet). I love the lore and love painting minis, and I’d like to get into painting some 40k stuff - my end goal is to make a large lore accurate Grey Knights army.
That aside, what are your thoughts on using proxy files/minis to build out an army? Does GW require all their figures be officially made for play? I’m guessing so.
If anyone has some cool proxies they like let me know!
