Are ADRs necessary at every Disney restaurant?

My family and I are Disney dining noobs and although we know that the biggies such as Chef Mickey's have to be booked 60 days out, what about other general restaurants?
For example, if we say decided we'd like to have breakfast at the Poly buffet one morning, could we just rock up and eat? Or if we were out in Disney Springs one evening and randomly decided to have dinner somewhere, would it be likely we could just walk in and sit down at a table? Or is 60 day planning required for this type of eating too?
The whole dining side of Disney feels so daunting lol
