Need help planning trip for next Summer

I'm bringing my family of four (two boys - 7 & 15). We've been once before but haven't been to all of the parks. We are staying at Bay Lake Tower Saturday, 6/1 - 6/8. We've got four 4-day theme park base tickets as well as one day tickets to Islands of Adventure.

We aren't concerned about shows or meet and greets but rather the most efficient means of getting in all of the rides each day. I also want to build up to what parks they enjoy the most - Universal, Hollywood, and MK

Based on undercovertourist crowd calendar for those dates my plan would be:

Sunday: Epcot

Monday: Animal Kingdom

Tuesday: Day off at resort

Wed: Hollywood

Thursday: Universal

Friday: MK

I'm leaning towards not getting a dining plan. While we like to eat, I feel the price and feeling that we have to use it would slow us down. Also, I'm not sure if the Genie would be worth it and for which parks.

Any super-planners have any advice for our initial itinerary if you were in my shoes? I'd even like to hear strategic plans within each park including dining, similar to what disneytouristblog has.
