Biketour + Camping - How to do you secure your soft bags when stopping by?

I'm doing a 1500km trip but the first time with soft cases over the seat.
This means that someone can just uncouple all the ropes and so on and steal the bag over it.
I'm concerned because there will be times where I'll want to take a walk, on each city I visit.
Do you just leave your bags there in simular situations?
