My kid calls me Fire Breather because I always win those spicy wing challenges at restaurants. This is one of my staple breakfast meals. You can omit the spicy stuff if you prefer.

1 cup sliced baby red potatoes 1/4 bell pepper, sliced 3 mini sweet red and yellow peppers, sliced 2 habanero peppers, sliced 1/4 onion, sliced (I like red for sweetness, but yellow and white will work just fine) 5 cherry tomatoes, sliced in half 6 TBS egg whites 2 large eggs Cajun seasoning, to taste Salt, to taste Vegetable oil spray

Season the potatoes with salt and Cajun seasoning. Spray a nonstick cooking pan with vegetable spray and heat over medium heat. Cook potatoes on one side until they develop a bit of a char, then add peppers.

Cook until peppers begin to soften, then add onions and tomatoes. Cook until tomatoes soften and onions are translucent. Add eggs and egg whites, a pinch more salt, and cook until eggs are done.

I usually garnish with green onions, but didn't have those today. I add whatever hot sauce I feel like using. Today was Hot Ones Rojo and Melinda's Ghost Pepper Wing Sauce. I imagine a mild salsa will taste great, too.

This makes one serving, but the recipe can be easily doubled.
