bun refers to the type of noodle. nem nuong and thit nuong refers to that meat on the side; its hard to tell what is. nem nuong is like a seasoned pork sausage. Thit nuong is grilled pork. cha gio is the imperial roll (which looks more like an egg roll here). Usually the naming scheme (at least in Californian vietnamese restaurants) is something in the order of “Bun Cha Gio Thit Nuong”
