((Newbie))Are swarms of fruit flies normal/unavoidable in my worm farm and how long can food sit in there before it should be removed?

I just put my worm farm together and have about 400 worms in a 3 bucket stack system. I have screen over every ventilation hole to prevent larger bugs getting in, but are loads of fruit flies part of a healthy bin?

Also, I know food rotting too much can kill the worms, how long can I leave scraps in there before I should remove them? I spent some dough on these little shits and Iā€™m really determined to take good care of them and keep them alive šŸ˜“
