Dumb question.. Restoring from backup copy on local server

Hi All
Dumb question here.
I backup copy backups across my network to another site, and I want to restore some data from that backup copy on the local server where I've copied to.
How do I do this? When I go to do a restore, seems that I can only restore to my primary server.
What do?
Edit: Specifically trying to pull some application items out
