They heat a big chunk of sand in a big insulated tank and it acts as a thermal battery, holding its heat for an absurdly long time. They then extract that thermal energy by running pipes of water or air through it to use for heating.
They can also convert that heat back to electricity, but as I understand, it's much less efficient than using the heat directly.
