When is the deadline (if any) for Grad school applications for the winter semester?

I've been looking to go to graduate school for chemistry, but obviously I missed the deadline for this fall and was wondering if it is even possible to start in the winter and if so, what the deadline is.
Related to that, is it better to speak with professors to hopefully get a professor to be your supervisor for research before submitting an official application to grad school, or should I go through the official channels?
