Pepper, You're a spice I thought I understood...but then I learned I've been doing it all wrong. Your heat shouldn't be liberally applied and crassly burned away, but rather, applied at a precise moment to solicit the purest flavor. I'm having to learn how to cook all over again. Paying attention to amounts and timing is never something that I bothered with before. "Toss it on, the more the better". I get it now. Slow heat. Moderation. I'm re-learning something I thought I was so good at. You made me realize that a hot stove always burns. Help me get the heat right. Please. I can't stand the thought of ruining another dinner. I want your taste in my mouth. Kate
