First time going: How many days/hours do you need to do almost all of Universal without the express? And offsite vs on-site hotels?

First time going hopefully during the week (Sunday-Wednesday/Thursday). How many actual days in the park do you need?
Are offsite hotels like across the street just as good/walking distance as on site ones? Any perks for either or? Just so lost on how to plan this trip.
