undertale would make a great anime, a stupendous anime. and it wouldn't be all that difficult to adapt it
Undertale already has an AMAZING soundtrack, probably one of the best soundtracks for any game. this alone would make the production of an anime significantly easier, and cheaper. but along with that, an anime adaptation is really the perfect medium to tell the undertale story outside of the game,
and since undertale is so popular that means it would draw a very large audience, and if the adaptation was done well. the game could even have another surge of popularity. in fact, i think an anime would double, in fact the considerable larger anime community could cause an unprecedented level of popularity and interest in Undertale, and even bring more people to the indie gaming community at large, plus, it would definitely generate the funds for Toby fox to have the game translated to more languages, widening his audience by a massive scale.
of course, this isn't even taking into account the funds that could be generated by the anime itself. since all of the dialogue, character writing, and story are already written. the anime wouldn't be any harder to adapt than a manga, it would actually be easier thanks to the already written soundtrack and dialogue, not to mention the characters are already popular so the anime would be almost guaranteed to make profit, as long as it was faithfully adapted. i think if there were an adaptation, the pacifist route would be the best course. but since there are multiple routes they could even adapt each route. overall, an anime adaptation would be very likely a success, and it would allow for the expansion of Toby fox's audience. it would also be significantly easier to adapt given its nature is closer to that of an anime. and considering undertale is actually more popular in japan than the united states. it wouldn't be out of the question if Toby fox decided to go that route. there's a clear economic incentive, and it would be awesome if it happened, and it would be easier to adapt thanks to its high production value. so i think toby fox should try it
