General Advice on Getting Started

Hi Runners,
I will keep this brief. I am looking to get started running with a long-term goal and seek advice on a few things. I hope some of you can help.
- I have flat feet, like super flat. My foot doctor said I have the flattest feet she has ever seen. I have custom inserts for everyday walking and hiking. I suspect that I will need custom inserts for running. Is there a service out there that provides suitable inserts for runners? Google shows several mail-order services, but I don't know how good these are.
- Is it worth looking for a coach to analyze my stride? I suspect I could use much-needed help. I also want to save as much of my knees as possible.
- Currently, when I run, my HR jumps to the green zone 150-180 bpm. It's hard for me to stay in my target zone of 130-140. Is this normal for new runners?
