Realistic weight?

So this time I tried to pack lighweight for a 5 day hiking trip, but didn't succeed (ok I did better than last time, but still found it too hard to minimize weight). My food water weighted 8kg, and the rest 12kg. So what is a possible weight for hikes of different lengths if you truly try to go lightweight (without buying the best and lightest equipment, but maybe 2nd or 3rd tier ones)? How much of "extra" stuff like first aid supplies are needed?

So guess I'm just ranting and asking for some kind of tutorial for dummies who want lighten their load without without buying the best stuff. So more about what is truly necessary and what isn't.
