Can we talk about what builds we use vs certain champs?

The old metasolaray spreadsheet was great and all, but it's not updated for the current season.
I'd love to hear your preferred builds and rune setups, especially against champs like Mundo; Amumu; Kindred.
I play in Gold and I KNOW that itemization is probably my weakest spot. Right now my favorite 'base' is a health build using titanic and frostfire as the core, but it's just not a one-size-fits-all like the overtuned chemtank from the start of the season.
