How do you know if stamps are real?

Hi USPS! Thanks for all that you do. I send tons of postcards to and from the USA and love to mix up the stamps on them. Obviously current or previous year issue Forever stamps are probably pretty obvious, but what about the hundreds of others out there from years prior? How can the postman know all prior year stamp issues??? Any cool stories? Do you like seeing international stamps on incoming mail?
