Who's cooking today? Sun's out!

I've got a basic cook planned today, some duck breast portions and pork belly slices.
Both will be over charcoal with beech chips (I know - got some apple wood in the works next week).
I'm gonna be trying out my new (and first) multi-probe thermometer, which is exciting.
Also cooking pizzas later, so trying to come up with ways to include the pork belly as a topping for that. Any ideas/suggestions?
