Plausibility of a statistics minor?

Hey all, quick question

I'm a junior this semester coming from community college and majoring in polisci, and was initially looking to get a minor in statistics but it doesn't seem possible to accomplish in only four semesters; I'd have to complete the calc sequence, which would take three semesters, then take Diff EQ before I can take some of the calc-based stats classes. Should I look into getting a minor into something else, like economics?

A while back a user recommended a list of different math courses to take, but didn't say anything about getting a minor or anything - they gave me just the course names. Would I gain anything by taking math classes without trying to get any sort of minor? I'm just not sure how to let employers know I have a legitimate knowledge of calc/stats without a minor
