Turkey in May?

I am thinking of doing a trip to Istanbul sometime in May for a week. I am American (however I posted on here how I look very Turkish and you responded positively) so I will blend in with the locals.
What I wanted to ask are three things:
- I will try and learn basic Turkish but is English spoken by the majority of Turks? Will I have any trouble communicating?
- Is one week enough or too much for Istanbul?
- What are some things I should know?
