Hi knifes lovers, I've allways been a huge knife fan and japanese knife especially. I've been last year in japan and i've finally bought my first pair of japanese knife in kappabashi. Good knifes, a santoku A10 and a petty vg10. I've fallen in love and i'm now thinking to buy a piece that will last me for a lifetime.
- Thinking about a Kiritsuke or a Gyuto (210mm, i don't like long knifes)
- Not a fan of carbon steel...maybe i could consider blue, which is a bit more rust resistent
- Not a huge fan of frequent sharpening (i was looking at some HAP40 steel knife from Sukenari)
- I'm in Europe so i need a store that can deliver here
- Budget up to 5/600€
- Don't need it now and i'm ok with wait times and restocks
Now i need your experience and culture to help me.
hap 40 is somewhat rust resistant but it's still considered only semi stainless.
if you want a high edge retention stainless steel you could consider sg2.
